Cooking Instructions
Mix 1 lb of corn dough with 3 tablespoons of achiote until well combined. Shape into small tortillas.
Heat oil in a skillet and fry the tortillas until golden and slightly crispy. Remove and set aside.
In another skillet, heat a little oil and cook 1 lb of ground beef. Add Rio Grande Seasoned Sauce and mix well.
Warm up 1 bag of Rio Grande refried beans until smooth and hot.
Assemble the enchiladas: on each fried tortilla, spread a layer of beans, add cooked meat, top with Rio Grande curtido, slices of hard-boiled eggs, a spoonful of Rio Grande pupusa sauce, and finish with grated Rio Grande cheese.
Serve immediately and enjoy while warm and crispy.
